Roasted butternut squash is simmered with curry, coconut milk and a hint of spice in this warm and comforting soup perfect for weeknights.
This can be bought online or made by combining 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg and 1/4 teaspoon ground allspice.
YUM! I cooked the squash (I used Kabocha), the day before so putting it all together was a breeze. We don't like nutmeg so I sub cinnamon and turmeric instead YUM!!!! Used low fat coconut milk so not to naughty .thank you for this fabulous fall soup - 23 Sep 2017 (Review from Allrecipes US | Canada)
