Cauliflower 'rice' with salsa

    This is a low-carb version of Mexican rice made with cauliflower instead of rice. It is mixed with salsa and spring onions to make a quick and easy side dish.

    Ingredients
    Serves: 2 

    • 2 tablespoons olive oil
    • 1 head cauliflower, grated
    • salt and freshly ground black pepper to taste
    • 240ml salsa
    • 2 spring onions, sliced

    Method

    1. Heat olive oil in a large pan over medium heat. Add cauliflower and cook until tender, about 10 minutes; season with salt and pepper. Stir salsa and spring onions into cauliflower.

    Note:

    Grate cauliflower using a grater or food processor.

    I think next time I’ll try to improvise my own salsa, as mine tasted distinctly like Tostitos. I like the grated cauliflower idea, since we get a ton from our CSA and I can only make so much stir fry and curry dishes...  -  23 Jul 2018  (Review from Allrecipes US | Canada)

    Easy to make. I did use a food processor which made it very easy! The salsa and green onions gave the cauliflower a nice distinct but not overwhelming flavor. The texture of the cauliflower was very good.  -  18 Jan 2018  (Review from Allrecipes US | Canada)
