    About this recipe: These quick and easy oat and chia seed bites held together with almond butter are a great snack when you need an energy boost.

    Serves: 18 

    • 200g oats
    • 250g almond butter
    • 175g dark chocolate chips
    • 120ml honey
    • 30g chia seeds
    • 30g milled flaxseeds
    • 25g desiccated coconut

    Prep:20min  ›  Extra time:30min  ›  Ready in:50min 

    1. Combine oats, almond butter, chocolate chips, honey, chia seeds, flaxseeds and coconut in a stand mixer fitted with the paddle attachment. Beat together, gradually increasing speed, until mixture no longer sticks to the centre of the paddle.
    2. Shape mixture into 2cm balls with your hands. Place on a baking tray lined with greseproof paper.
    3. Freeze balls until firm, about 30 minutes. Transfer to an airtight container and store in the fridge.

    Loved these little balls of scrumptiousness. This made 27 balls. I did make a couple of changes due to what I had - Nutella instead of almond butter and all chia seeds rather than chia and flax. I'm sure these will be just as good as written. Keeping them in the freezer and grabbing out a couple at a time when I want a treat.  -  18 Nov 2016  (Review from Allrecipes US | Canada)
