Tomato and spinach quinoa

    Quinoa is simmered with tomatoes, spinach, pesto and Parmesan cheese in this one-pan dish that works as a main or a side.

    Ingredients
    Serves: 4 

    • 1L chicken (or vegetable) stock
    • 350g quinoa
    • 3 ripe tomatoes, chopped
    • 100g fresh spinach
    • 4 tablespoons pesto
    • 20g grated Parmesan cheese

    Method

    1. Bring chicken stock and quinoa to the boil in a saucepan. Reduce heat to medium-low, cover and simmer until most of the stock is absorbed, 10 to 15 minutes.
    2. Stir tomatoes, spinach and pesto into the quinoa. Simmer until remaining chicken stock is absorbed and quinoa is tender, about 5 minutes. Sprinkle Parmesan cheese over quinoa mixture.
