Bacon and blue cheese potato cakes

    These delightful little morsels of blue cheese, bacon and potato cooked until crispy are simply lovely on their own or paired with pork chops.

    Serves: 12 

    • 4 slices bacon
    • 900g potatoes, cubed
    • 45g crumbled blue cheese
    • 60ml semi-skimmed milk
    • 1 egg
    • 3 spring onions, thinly sliced
    • 3/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 55g breadcrumbs
    • 1 1/2 tablespoons olive oil
    • 1 tablespoon butter

    1. Place bacon in a large pan and cook over medium-high heat, turning occasionally, until browned and crisp, about 10 minutes. Drain on kitchen roll; slice into smaller pieces.
    2. Place potatoes in a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and return to the pot; mash slightly.
    3. Stir bacon, blue cheese, milk, egg, spring onions, salt and pepper into the pot; mash mixture with a potato masher to desired consistency. Cool slightly, about 5 minutes.
    4. Pour breadcrumbs into a shallow bowl. Shape the potato mixture into twelve potato cakes; dredge in the breadcrumbs.
    5. Heat olive oil and butter in a large nonstick pan over medium heat. Add 4 potato cakes; cook until browned, about 2 minutes per side. Repeat with remaining potato cakes. Cover and keep warm.

    Cook's Notes:

    Substitute bacon grease for the olive oil and butter if desired.

    Really liked these. The blue cheese added an extra depth of flavor. Had to make two separate batches since the grandkids don't like blue cheese. I thought they were much better with the blue cheese than without.  -  10 Oct 2016  (Review from Allrecipes US | Canada)
