Crustless mini quiches

    These mini quiches have no pastry and are very easy to prepare. Great for lunch boxes instead of sandwiches. You can replace the bacon with diced ham, if you prefer.

    Ingredients
    Makes: 12 mini quiches

    • 4 eggs
    • 100g double cream or crème fraiche
    • salt and freshly ground pepper
    • 1 pinch ground nutmeg
    • 150g cooked bacon, sliced into small pieces

    Method

    1. Preheat the oven at 200 C / Gas 6. Lightly grease a 12-hole muffin tray.
    2. Whisk the eggs and the cream together in a large bowl. Add salt and pepper and season with nutmeg. Add the copped bacon and mix well.
    3. Pour or spoon the quiche mixture evenly into the 12-hole muffin tin; cook for about 35 minutes, or until the quiches are golden brown on top and firm in the centre.
