Rocky road with peanuts

    Here's my rocky road recipe. Packed with fillings it's really a standard rocky road but I like to add nuts for extra crunch and texture.

    Serves: 12 

    • 300g dark chocolate, chopped
    • 160g butter
    • 220g crushed digestive biscuits
    • 160g mini marshmallows
    • 50g unsalted peanuts

    1. Break up the chocolate into chunks and add the butter. Melt in a heatproof bowl set over a saucepan of hot water over medium heat.
    2. In a bowl mix the biscuits, marshmallows and peanuts together.
    3. Pour 2/3 of the chocolate mixture over the dry ingredients and mix well.
    4. Transfer the mixture into a greased and lined baking tray and spread evenly with a wooden spoon. Pour the remaining chocolate over the top and leave to set in the fridge.
