Oladi (Russian kefir pancakes)

    Oladi are similar to traditional pancakes, but usually smaller in size and are fried in oil, which produces a beautifully crunchy edge.

    Serves: 4 

    • 1 egg, beaten
    • 1 tablespoon granulated sugar
    • 125ml kefir or buttermilk
    • 150g plain flour
    • 1/3 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 1 tablespoon vegetable oil

    1. Beat together all ingredients except for the oil with a whisk or in a blender.
    2. Heat non-stick frying pan on medium-low heat. Add oil and heat well.
    3. Pour 1 to 2 tablespoons of batter per each pancake. Fry in hot oil, flip when bubbles come up to the surface. Brown on the other side.
    4. Serve hot with jam or soured cream.
