Autumn American pancakes

    Autumn pancakes make a lovely breakfast. These pancakes are so light and fluffy. If you haven't made American pancakes before don't worry if you think the mixture looks thick, it's a different mix to our traditional Pancake Day recipe. Serve with maple syrup.

    Serves: 4 

    • 135g self raising flour
    • 2 tablespoons caster sugar
    • 1/2 teaspoon baking powder
    • 130ml semi skimmed milk
    • 1 medium free range egg
    • 1 dessert apple
    • few dried chopped dates
    • ground cinnamon, to taste

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Hand whisk flour, sugar, baking powder, milk and egg in a jug.
    2. Chop apple and dates into small pieces. Set aside.
    3. Heat a frying pan with a little spray of oil.
    4. When pan is heated, pour in pancake batter to about 0.5cm thick and 12cm wide.
    5. Put some of the apple and dates and a sprinkle of cinnamon on top of cooking pancake. Cover fruit with extra batter, about 3 tablespoons, and spread over .
    6. When underside is cooked, flip over and cook till golden on the other side. Remove from pan and repeat with remaining batter.
    7. Serve with a little maple syrup to taste and enjoy.
