About this recipe:Fresh crab is stir fried with garlic, ginger and plenty of fresh chillies, then combined with curry powder and coconut milk for lots of flavour. Smallish crabs such as blue swimmers are good for this but you can use any fresh crabs you find at the market.
2 whole crabs
2 tablespoon yellow rice wine
1 tablespoon vegetable oil
5 cloves garlic, sliced
5 fresh root ginger, sliced
1 red pepper, diced
3 red chillies, sliced
100ml coconut milk
2 tablespoon yellow curry powder
1 teaspoon cornflour
1 tablespoon water

Clean the crab and cut into quarters. Place in a bowl and sprinkle over the rice wine. Let marinate 5 minutes.
Heat oil in a wok and briefly stir fry the crab. Add garlic and ginger and stir fry 2 minutes more.
Add red pepper and chillies and stir fry 1 minute. Add coconut milk and curry powder and bring to a simmer. Dissolve the cornflour in a tablespoon of water and add to thicken the sauce. Serve!
