Chow mein packed with lots of veg, chicken and prawns. Making an authentic Chinese meal at home doesn't get easier than this! It sounds unusual but sprinkle this stir fry with a pinch of sugar before eating, it gives it a very appetising kick.

1 teaspoon salt
1 teaspoon oil
300g prawns, peeled and deveined
100g green cabbage, chopped
100g carrots, chopped
100g courgette, chopped
60g mushrooms, chopped
100g broccoli, chopped
400g egg noodles
2 tablespoons oil
1 tablespoon minced garlic
300g skinless chicken fillets, diced
2 tablespoons chicken stock granules
2 teaspoons salt
3 tablespoons soy sauce

Bring a large saucepan of water to the boil and add 1 teaspoon each of salt and oil.
Blanch the prawns, cabbage, carrots, courgette, mushrooms, broccoli and egg noodles until tender. Remove, rinse with cold water and drain well.
Heat 2 tablespoons oil in a wok. Saute garlic until fragrant. Add the chicken and stir fry until browned. Add the prawns, vegetables and noodles and stir fry until heated through.
Season to taste with chicken stock granules, salt and soy sauce, mixing well. To serve, drizzle with sesame oil and sprinkle with a bit of sugar.
