Quick creamy salmon tomato pasta

    30 min

This is my favourite pasta dish made with fresh salmon and tomatoes in a cream sauce. If you want to reduce the calories, you can use milk for part of the cream, but believe me, with cream it is to die for!

    1 person made this

    Serves: 4

    • 450g spaghetti
    • 1 tablespoon vegetable oil
    • 300g salmon fillet, cut into cubes
    • 1 clove garlic, minced
    • 450g tomatoes, chopped
    • 1 tablespoon freshly chopped basil
    • 1 pinch salt and freshly ground black pepper to taste
    • 180ml double cream

    Prep:15min  ›  Cook:15min  ›  Ready in:30min

    1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water according to package instructions, stirring occasionally, until tender yet firm to the bite. Drain.
    2. Heat oil in a skillet over medium heat while spaghetti is cooking and cook salmon and garlic until salmon is lightly browned, about 5 minutes. Add tomatoes and basil, season with salt and pepper, and cook for 3 minutes. Pour in cream and simmer over low heat until flavours are well combined and salmon is cooked through, about 10 minutes. Serve sauce over cooked pasta.

Super quick and easy to make and tastes delicious. I have made this a few times already. The other day I used parsley cause that's what I had at hand instead of the basil and that was tasty, too (though I prefer the basil).  -  04 Jan 2018  (Review from Allrecipes US | Canada)
