Spaghetti with roasted courgette and tomato

    An easy pasta dish with roasted courgette and cherry tomatoes.

    • 1 medium courgette
    • 250g cherry tomatoes
    • 2 garlic cloves, minced
    • Italian seasoning, to taste
    • salt, to taste
    • 300g wholewheat spaghetti
    • pepper, to taste
    • freshly grated Parmesan cheese, to taste

    1. Preheat your oven to 240 C / Gas 9.
    2. Trim courgette and scrape out the seeds if they are big. Dice courgette. Add to an ovenproof dish with tomatoes, garlic, herb salt and oil and spread out so it's in one layer.
    3. Roast in the preheated oven till courgette is golden, about 20 minutes, turning them over so they roast evenly.
    4. In the meantime cook spaghetti till al dente. Drain and tip in a bowl. Add roasted veg. Deglaze the pan with a little bit of hot water and add this to the spaghetti. Add pepper to taste and serve with grated Parmesan cheese.
