Almond traybake

    This is the easiest and quickest cake recipe I know and always a crowd pleaser.

    Serves: 12 

    • For the base
    • 250ml double cream
    • 200g caster sugar
    • 125g plain flour
    • 4 eggs
    • 2 teaspoons vanilla sugar
    • 1 pinch salt
    • 2 teaspoons baking powder
    • 1 tube liquid butter vanilla flavouring (optional)
    • For the topping
    • 125g butter, softened
    • 150g caster sugar
    • 2 teaspoons vanilla sugar
    • 4 tablespoons milk
    • 200g almond flakes

    1. Preheat your oven to 200 C / Gas 6.
    2. In a bowl, add all ingredients of the base and stir till smooth. Pour on a greased Swiss roll tin and bake till bubbles start to form, about 10 minutes. Remove form the oven and prick evenly with a fork all over the surface.
    3. In a bowl add all the ingredients for the topping and distribute evenly over the base. Bake till golden brown, about 10 minutes. Let cook, then cut into squares.
