Chocolate and coffee mudcake

    This chocolate and coffee mudcake will delight your senses! It's a dense and rich cake, great served with ice cream or whipped cream.

    Makes: 1 cake

    • 250g butter
    • 250g plain chocolate, chopped
    • 550g granulated sugar
    • 175ml hot water
    • 2 tablespoons instant coffee
    • 125ml milk
    • 4 eggs
    • 30ml vegetable oil
    • 300g plain flour
    • 55g cocoa powder
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 1/2 teaspoon bicarbonate of soda

    1. Set up a double boiler using a large heatproof bowl set over a pan of simmering water. Melt butter, chocolate and sugar. Mix instant coffee and hot water together and add to the mix.
    2. Once all is melted and combined, take off heat and add milk. Whisk in one egg at a time using an electric whisk. Now, whisk in vegetable oil.
    3. Sieve in the flour, cocoa, baking powder, salt and bicarb. Mix well, making sure there are no pockets of flour. Pour into a greased 20cm (8 in) round cake tin.
    4. Bake in a preheated 150 C / Gas 2 oven for 2 hours.
