Date squares

    A popular treat in Quebec, this traybake is a layer of softened dates sandwiched between an orange-oat mixture. I have tried multiple recipes before deciding that this one is my favourite. The orange zest makes all the difference!

    Serves: 10 

    • 225g pitted dates
    • 4 tablespoons water
    • 4 tablespoons orange juice
    • 125g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/8 teaspoon salt
    • 1 teaspoon orange zest
    • 225g butter
    • 225g brown sugar
    • 160g quick cooking oats

    1. Preheat oven to 160 C / Gas 3.
    2. In a saucepan, boil together dates, water and orange juice until the dates are easily crushed with a fork. Set aside.
    3. In a bowl, sift flour with bicarbonate of soda and salt. Add orange zest and butter; mix with a knife, until crumbly. Add brown sugar and oats; mix well.
    4. Press half of the oat mixture into a 20cm square pan. Cover with the date mixture, then sprinkle the other half of the oat mixture on top, pressing down lightly.
    5. Bake until the top is golden, 30 to 40 minutes.
