A popular treat in Quebec, this traybake is a layer of softened dates sandwiched between an orange-oat mixture. I have tried multiple recipes before deciding that this one is my favourite. The orange zest makes all the difference!

225g pitted dates
4 tablespoons water
4 tablespoons orange juice
125g plain flour
1/2 teaspoon bicarbonate of soda
1/8 teaspoon salt
1 teaspoon orange zest
225g brown sugar
160g quick cooking oats

Preheat oven to 160 C / Gas 3.
In a saucepan, boil together dates, water and orange juice until the dates are easily crushed with a fork. Set aside.
In a bowl, sift flour with bicarbonate of soda and salt. Add orange zest and butter; mix with a knife, until crumbly. Add brown sugar and oats; mix well.
Press half of the oat mixture into a 20cm square pan. Cover with the date mixture, then sprinkle the other half of the oat mixture on top, pressing down lightly.
