Treacle cookies


    I love treacle cookies, and this is by far the best recipe I have tried. Even better the next day.

    Serves: 10 

    • 170g margarine
    • 110g dark brown soft sugar
    • 1 egg
    • 250g treacle or molasses
    • 375g plain flour
    • 1 1/2 teaspoons bicarbonate of soda
    • 2 teaspoons ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground clove

    1. Preheat oven to 190 C / Gas 5.
    2. In a bowl, beat the margarine until creamy. Add brown sugar and egg; beat at high speed till thoroughly combined. Reduce speed to low and beat in remaining ingredients until smooth. Cover and chill the dough for 1 to 2 hours.
    3. Shape the dough in 3cm balls and place on a greased baking tray; flatten slightly.
    4. Bake for 8 to 11 minutes. Let cool.
