Poor man's pudding with apples

Poor man's pudding is a classic of Quebec cuisine, called Pouding chômeur. A simple sponge mixture is covered with a caramel-like sauce, which falls to the bottom of the dish during baking. Here is a 'tatin' version of the classic, with apples at the bottom. Serve with vanilla ice cream.

Ingredients

- 2 apples - peeled, cored and sliced
- 125g plain flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 75g butter, softened
- 130g granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 75ml milk
- For the sauce
- 220g brown sugar
- 2 tablespoons plain flour
- 420ml water
- 30g butter

- Preheat oven to 180 C / Gas 4. Grease a 20cm square baking dish. Place apple slices at the bottom of the dish.
- Sift together flour, baking powder and salt.
- Beat butter with sugar in a bowl; add egg and vanilla; mix well. Gradually beat in the flour mix, alternating with milk. Transfer to the baking dish.
- For the sauce, combine brown sugar, flour, water and butter in a saucepan; bring to the boil, then pour over the cake mixture in the baking dish. Do not stir; the sauce will fall to the bottom during baking.
- Bake for 45 to 50 minutes. Serve warm or at room temperature.
