Baked beans with maple syrup

    Baked beans are a classic dish in Quebec cuisine, often served during the Christmas holidays. They are traditionally prepared with lard and sweetened with maple syrup.

    Serves: 4 

    • 250g dried white beans
    • 225g salted lard
    • big pinch of ground pepper
    • 2 teaspoons mustard
    • 1 tablespoon maple syrup or treacle
    • 1 small onion, chopped

    1. Soak beans overnight, then boil for 25 minutes. Transfer to a clay (or ceramic) cooking pot.
    2. Preheat oven to 190 C / Gas 5.
    3. Add lard, pepper, mustard, maple syrup and onion to the clay pot; mix well. Cover with boiling water and place a lid on top. Cook for 2 hours in preheated oven.
    4. Increase oven temperature to 220 C / Gas 7. Remove lid and cook the beans until the top has browned.

    I have no idea how to make or where to buy salted lard so my solution was to use bacon grease instead. While it may not be traditional, it was delicious! The bacon flavor and maple syrup paired perfectly together and gave the beans a nice smokey sweet flavor. The mustard flavor was more dominant than I expected both in flavor and color of the dish. We love mustard but you might want to scale back if you don't love mustard. After checking the beans at 2 hours I decided to skip step 5. They were pretty done and starting to split and we prefer them with some firmness to them. This recipe takes some time so plan ahead.  -  16 Apr 2017  (Review from Allrecipes US | Canada)
