Maple syrup pudding

    Maple syrup pudding is a classic French Canadian recipe. The cheaper version, called 'poor man's pudding' (pouding chômeur) is prepared with brown sugar and water instead of maple syrup. In both cases, the sweet syrup falls to the bottom during baking.

    • 100g margarine or shortening
    • 200g caster sugar
    • 2 small eggs
    • 240ml milk
    • 250g plain flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 120ml water
    • 350ml real maple syrup

    1. Preheat oven to 180 C / Gas 4.
    2. Beat margarine or shortening in a bowl; add sugar, eggs and milk; beat well. In another bowl, combine flour, baking powder and salt; gradually incorporate to the wet mixture. Transfer to a 20 cm square glass baking dish.
    3. Boil water and maple syrup together in a saucepan for a couple of minutes. Pour on top of the sponge mixture in the dish (syrup will fall at the bottom while cooking).
    4. Bake for 30 minutes.
