Mish-mash omelette

    My mum has used this recipe since I was little. It's a tasty omelette full of veg and sprinkled with cheese.

    Serves: 2 

    • rapeseed oil, for frying
    • 1 onion, chopped
    • 1 carrot, chopped
    • 5 large mushrooms, chopped
    • 1 small courgette, chopped
    • 4 eggs, beaten
    • 75g grated cheese
    • salt and pepper to taste

    1. Heat some oil in a frying pan over medium heat. Add onion and carrot and cook and stir for 2 minutes. Add mushroom and courgette and continue to cook and stir till softened.
    2. Spread vegetables evenly across bottom of pan. Pour eggs evenly over the vegetables. Sprinkle the grated cheese around the the mixture and season with salt and pepper.
    3. Cook on a low heat, till you can see the egg has cooked around the sides. Then transfer your pan to a low grill and grill the top until you can see it is cooked.
    4. Cut and serve.
