Aïoli is simply a mayonnaise with lots (and lots) of garlic! It's very popular all over France. Try this easy recipe and your aioli will be a success. You can enjoy it with fish in court bouillon as is the tradition in small villages in Provence.

1 egg yolk
1 tablespoon mustard
salt and freshly milled black pepper
2 teaspoons vinegar, divided
150ml olive oil
150ml vegetable oil
4 cloves garlic, pureed

Using a spoon, mix the egg yolk, mustard, salt, pepper, and 1 teaspoon of the vinegar. Trickle the olive oil over the mixture gradually and very slowly while whisking with an electric hand mixer.
When the olive oil has blended with the mixture, add the remaining 1 teaspoon of vinegar; trickle in the vegetable oil very slowly while still mixing. The mayonnaise should be stiff. Finish by delicately folding the garlic puree into the mayonnaise.
