Simple soft cookies

    Unlike normal ones, these chocolate chip cookies are soft, rich and yummy. They are good for beginners and hard to mess up.

    Makes: 2 dozen

    • 225g unsalted butter
    • 170g caster sugar
    • 170g soft brown sugar
    • 2 eggs
    • 250g self raising flour
    • 225g roasted salted peanuts
    • 340g milk chocolate chips

    1. Cream the butter and both sugars in a mixing bowl. Gradually beat in eggs one at a time, sprinkling in a bit of the flour if mixture starts to split.
    2. Stir in flour, and then when ready, add in the nuts and chocolate chips. Cover bowl and chill in the fridge for half an hour.
    3. Preheat oven to 180 C / Gas 4 and line two baking trays with baking parchment.
    4. Take scoops of the cookie dough and place on the trays.
    5. Bake cookies in oven for 10 to 15 minutes. Cool and enjoy!


    Can be done without nuts.
