Turn on your oven to 200 degrees or gas mark six. Measure out all of your ingredients and mix together the dry ingredients.
Then in a separate bowl, mix the butter and sugar until light and fluffy.
After that put your butter and sugar in with all the dry ingredients and mix with a wooden spoon until you have all of the lumps out.
Next, crack your egg in a cup or a small bowl and stir with a fork and make sure you have no shell in the cup.
Add the egg in with the mixture and stir for 3 to 4 minutes.
If your mixture is looking a bit on the doughy side then add about a table spoon of milk and your vanilla extract this step is optional
Then put it in the oven for 20 to 25 minutes. and there you have your sponge cake!
Make sure you mix it for quite long or it might not rise as well.
Instead of vanilla extract you can add almond extract.
Try it with some butter icing on top it will taste even better! (i have made a butter icing recipe if you want to check that out to called better butter icing)
