Tartiflette savoyarde

    Tartiflette is a French main potato dish with cheese and bacon. The original recipe calls for Reblochon, a soft cheese from the Savoy region in the French Alps but if you cannot find it, you can use ripe Camembert instead.

    Ingredients
    Serves: 6 

    • 1kg potatoes
    • 1 knob butter
    • 3 onions, minced
    • salt
    • 150ml dry white wine
    • 150g bacon, diced
    • 300g ripe Reblochon or Camembert cheese
    • minced spring onions (optional)

    Method

    1. Boil unpeeled potatoes in a pot of salted water till they can be pierced, about 30 to 40 minutes. Drain and let cool till you can touch them and peel.
    2. Melt butter in a frying pan and fry onions till translucent. Deglaze pan with wine, cover and cook over low heat for 25 minutes.
    3. In another pan fry bacon till it draws fat. Add onions and bacon and season well with pepper.
    4. Preheat oven to 180 C / Gas 4 and grease a gratin dish.
    5. Spread half of the bacon onion mixture in the dish. Slice potatoes 1cm thick and place in dish, then cover with the remaining onion mixture.
    6. Cut the cheese horizontally and then into pieces and scatter them with the rind side up.Bake in the preheated till browned and bubbly, about 30 minutes. Sprinkle with spring onions and serve.
