    Chin Chin are a traditional Nigerian deep-fried snack made with flour, butter, milk and nutmeg.

    Serves: 8 

    • 1kg plain flour
    • 275g butter, at room temperature
    • 2 teaspoons ground nutmeg
    • 150ml milk
    • 250ml vegetable oil for frying

    1. Mix flour, butter and nutmeg together in a large bowl until well incorporated. Stir in milk until dough comes together.
    2. Roll dough 1/2cm thick on a floured work surface and cut into small pieces.
    3. Heat oil in a deep-fat fryer or large saucepan until it reaches 175 C / 350 F. Fry dough pieces in batches until they turn golden brown and float to the surface, 3 to 5 minutes.
