Lemon drizzle, beautiful.

    Lemon drizzle that is so moist yet dense and tangy ! A must bake ! Enjoy !

    • 200g plain flour
    • 2 tbsp baking powder
    • 400g unsalted butter
    • 400g caster sugar
    • 200g ground almonds
    • 3 lemons, juice and Zest
    • 6 tbsp caster sugar
    • 1 1/2 tspn of vanilla extract


    1. In a freestanding mixer blend butter and sugar until combined. This should be white at this stage .
    2. Beat eggs and vanilla essence together slowly add egg mixture into butter and sugar .. so stop the mixture splitting add a spoon full of flour at at time also ... Add in lemon zest and ground almonds.
    3. Preheat oven to 160- 170 depending on your oven ...grease and line two loaf tins .. place in the centre and bake for 50 min
    4. When drizzle is nearly finished heat up the remaining sugar and lemon juice just until sugar is melted .
    5. When the drizzle is done and skewer comes out clean. Use skewer to poke several holes all through the cake ..still in Cake tin and drizzle over lemon syrup, leave to cool slightly . . Slice and serve .
