Bacon pancakes

    Thin pancakes, baked with slices of bacon are a real treat! In the Netherlands, pancakes are eaten as a main meal (not breakfast) so usually simple pancakes will be enriched with all sorts of savoury (or sweet) fillings like cheese, vegetables or apple. This basic recipe for pancakes with bacon is delicious, plain, but even better served with treacle, syrup or apple butter!

    Ingredients
    Serves: 4 

    • 300g self raising flour
    • 500ml milk
    • 1 egg
    • 1 pinch salt
    • 100g bacon
    • butter, for frying

    Method

    1. In a bowl, beat flour, milk, egg and pinch of salt with an electric mixer until the batter is smooth. Batter will be runny.
    2. Heat a frying pan on medium high and melt a small knob of butter. Place a couple of bacon slices in the pan. Add a ladleful (about 60ml) of batter to the pan to cover the bacon and bottom of the pan.
    3. When the edges of the pancake look dry and bubbles appear all over the surface, carefully flip the pancake with a spatula and cook until the other side is browned.
    4. Repeat with remaining bacon and batter. You can keep the pancakes warm between two plates, or in a preheated oven set to its lowest temperature. Serve warm.
