Chicory with ham and cheese


    Chicory is a popular vegetable in the Netherlands and eaten a lot in wintertime. This is one of the most popular ways of preparing chicory, wrapped in ham and covered with cheese.

    Serves: 2 

    • 4 chicory, halved lengthways
    • olive oil, for frying
    • 8 thin slices ham
    • Dijon mustard, to taste
    • 8 slices cheese (such as Gouda)

    1. Remove the bitter stem from the chicory. Pan fry a couple of minutes in a little olive oil until softened.
    2. Spread some mustard on the slices of ham and roll each chicory in ham.
    3. Arrange the chicory in a baking dish and cover with slices of cheese.
    4. Bake for 20 minutes in a preheated 200 C / Gas 6 oven, till bubbly and lightly browned. Enjoy straightaway.
