About this recipe: For a brilliant brunch or picnic, grab sweet, crunchy carrot and apple and combine with smoky-flavoured ham to make a speedy filling for croissants. Delicious!

Serves: 4 

  • 4 large croissants
  • 1 tbsp mayonnaise
  • 4 tbsp half-fat crème fraîche
  • 1 large carrot, coarsely grated
  • 1 sweet eating apple, quartered, cored and chopped
  • 2 spring onions, finely chopped
  • 25g radishes, sliced
  • 50g pecan nuts
  • 4 large slices of honey-baked ham, trimmed of fat and cut in half widthways

  1. Using a serrated knife, cut the croissants open horizontally, keeping the top halves still attached along one side like a hinge.
  2. Blend the mayonnaise and crème fraîche together in a bowl. Add the carrot, apple, spring onions, radishes and pecan nuts. Season and mix together well.
  3. Spoon the mixture on to the bottom half of each croissant, then top with the ham. Close the croissants and serve at once.


Fill croissants with your favourite ingredients, or try these ideas. (For the best results, first warm the croissants under the grill or in the oven.) * Canned salmon mixed with a little mayonnaise, topped with sliced Cheddar cheese. * Lettuce, chopped ripe tomatoes and stoned black olives, topped with hard-boiled egg and anchovies. * Cooked turkey breast with lettuce and a little mayonnaise. * Mushrooms fried withcrushed garlic, thyme and mascarpone.

Make the salad mixture up to 4 hours in advance and keep covered in the fridge until you are ready to fill the croissants.
