Yummy reindeer cupcakes

    I created this recipe for a Christmas cake stall two years ago raising money for Teenage Cancer Trust. I now make it every year and the whole family loves it. Yummy reindeer cupcakes is a perfect and fun recipe to make with children. It is a perfect yummy Christmassy cupcake perfect to eat by the fire waiting for Santa Claus to come.

    Makes: 12 cupcakes

    • Cupcakes
    • 125g self raising flour
    • 100g butter
    • 100g granulated sugar
    • 2 eggs
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon vanilla extract
    • Icing and decoration
    • 60g icing sugar
    • 2 tablespoons cocoa powder
    • 2 tablespoons melted butter
    • 1 tablespoon milk
    • 100g pretzels
    • 12 red smarties
    • 24 Parma Violets
    • mini sugar cookies

    1. Preheat the oven to 200 C / 180 C Fan / Gas 6.
    2. Mix the flour, butter, sugar, eggs, bicarb and vanilla in a bowl till smooth. Divide equally between 12 cupcake cases.
    3. Bake for 20 minutes, till golden. If a toothpick stuck in the centre comes out clean, they're ready.
    4. When the cupcakes are cooling mix the icing sugar, cocoa powder, butter and milk till smooth. When the cupcakes are cool spread the icing on top of the cupcakes.
    5. Cut the pretzels to look like antlers and stick two into each cupcake. Stick the mini biscuit just below the centre for a snout, two Parma Violets for eyes, and using icing as glue, stick the Smartie on the biscuit for a red nose. Use the icing as pupils in the middle of the Parma Violets.
