Yummy reindeer cupcakes
About this recipe: I created this recipe for a Christmas cake stall two years ago raising money for Teenage Cancer Trust. I now make it every year and the whole family loves it. Yummy reindeer cupcakes is a perfect and fun recipe to make with children. It is a perfect yummy Christmassy cupcake perfect to eat by the fire waiting for Santa Claus to come.
Ingredients
Makes: 12 cupcakes
- Cupcakes
- 125g self raising flour
- 100g butter
- 100g granulated sugar
- 2 eggs
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon vanilla extract
- Icing and decoration
- 60g icing sugar
- 2 tablespoons cocoa powder
- 2 tablespoons melted butter
- 1 tablespoon milk
- 100g pretzels
- 12 red smarties
- 24 Parma Violets
- mini sugar cookies

- Preheat the oven to 200 C / 180 C Fan / Gas 6.
- Mix the flour, butter, sugar, eggs, bicarb and vanilla in a bowl till smooth. Divide equally between 12 cupcake cases.
- Bake for 20 minutes, till golden. If a toothpick stuck in the centre comes out clean, they're ready.
- When the cupcakes are cooling mix the icing sugar, cocoa powder, butter and milk till smooth. When the cupcakes are cool spread the icing on top of the cupcakes.
- Cut the pretzels to look like antlers and stick two into each cupcake. Stick the mini biscuit just below the centre for a snout, two Parma Violets for eyes, and using icing as glue, stick the Smartie on the biscuit for a red nose. Use the icing as pupils in the middle of the Parma Violets.
