Easy simple sponge cake

    Easy to remember quantities, simple to make cake.

    Ingredients
    Makes: 1 cake

    • 175g (6 oz) butter, softened
    • 175g (6 oz) caster sugar
    • 3 eggs
    • 175g (6 oz) self raising flour
    • 1 teaspoon bicarbonate of soda

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Combine the butter and sugar until it comes together in a lump.
    2. Add in one egg at a time, mixing well (beat it up!).
    3. Fold in the flour and bicarb.
    4. Place into a greased tin and bake at 180 C / Gas 4 until golden brown and springy.

    Tip

    Even if using self raising flour add in the bicarb. If not using self raising flour add an extra teaspoon.
