Ingredients
Makes: 1 cake
- 175g (6 oz) butter, softened
- 175g (6 oz) caster sugar
- 3 eggs
- 175g (6 oz) self raising flour
- 1 teaspoon bicarbonate of soda

- Combine the butter and sugar until it comes together in a lump.
- Add in one egg at a time, mixing well (beat it up!).
- Fold in the flour and bicarb.
- Place into a greased tin and bake at 180 C / Gas 4 until golden brown and springy.
Tip
Even if using self raising flour add in the bicarb. If not using self raising flour add an extra teaspoon.
