    About this recipe: Gorgeous on its own or with seafood or meat. Great for picnics, BBQs, buffets.

    Ingredients
    Serves: 8 

    • 1/2 pineapple, cut into chunks
    • 1 mango, diced
    • 1 bunch spring onions, chopped
    • 10 large radishes, chopped
    • 10 baby plum tomatoes, halved
    • 1/2 large cucumber, diced
    • 1 red pepper, diced
    • 1 large red chilli, seeded and chopped
    • 1 handful fresh mint, chopped
    • 1 handful fresh coriander, chopped
    • juice of 1 lime
    • salt and pepper to taste

    1. Put everything in a bowl and mix together gently. Taste and season as necessary.

    To serve...

    Serve the salsa in the pineapple by halving the pineapple lengthways, then cutting and scooping out the flesh to make a pineapple 'bowl'.
