45g can anchovy fillets in olive oil, drained and roughly chopped
1 garlic clove, roughly chopped
1/2 tsp Dijon mustard
4 tbsp extra virgin olive oil
1 tbsp lemon juice
2 tbsp double cream
1 cos lettuce, torn into bite-sized pieces
4 tomatoes, cut into wedges
1 avocado, diced
1/4 cucumber, diced
100g Gouda cheese, diced
100g roast ham, diced

Put the anchovy fillets, garlic, mustard, oil and lemon juice into a food processor or blender. Blend together until the dressing is smooth, then add the cream and blend again for just a few seconds.
Put the lettuce, tomatoes, avocado, cucumber, cheese and ham into a large bowl and gently mix together. Alternatively, arrange the ingredients on four individual plates.
Lightly drizzle the anchovy dressing over the salad, season with black pepper and serve at once.
Vegetarian salad Instead of the ham add 2 hard-boiled eggs, cut into wedges. Make a creamy dressing by whisking together 1 tsp Dijon mustard, a pinch of caster sugar, 1 tbsp white wine vinegar, 4 tbsp olive oil and 2 tbsp half-fat crème fraîche.
Make a topping with some bought garlic croutons or crumbled pieces of bought cooked crispy bacon. * Or make Parmesan wafers: sprinkle 50g grated Parmesan cheese over baking parchment set on a baking sheet. Bake at 180°C (160°C fan oven), gas 4 for 15 minutes or until the Parmesan is melted, crisp and pale golden. Cool, then break into pieces and use to top the salad.
