Take fresh salad ingredients, ham and some piquant Gouda cheese, and drizzle with a smooth anchovy-flavoured dressing for an appetising salad that's great for a fast, healthy meal. Serve with crusty bread. Delicious!
Vegetarian salad Instead of the ham add 2 hard-boiled eggs, cut into wedges. Make a creamy dressing by whisking together 1 tsp Dijon mustard, a pinch of caster sugar, 1 tbsp white wine vinegar, 4 tbsp olive oil and 2 tbsp half-fat crème fraîche.
Make a topping with some bought garlic croutons or crumbled pieces of bought cooked crispy bacon. * Or make Parmesan wafers: sprinkle 50g grated Parmesan cheese over baking parchment set on a baking sheet. Bake at 180°C (160°C fan oven), gas 4 for 15 minutes or until the Parmesan is melted, crisp and pale golden. Cool, then break into pieces and use to top the salad.
