Slow cooker Greek lentil soup

    6 hours 15 min

Ever since becoming a mum, I've realised how precious time is! So I've been taking a lot of my traditional Greek recipes and adapting them for the slow cooker. Greek lentil soup, or Fakes, is a natural option for slow cooking and my husband and I think it tastes better than when made on the stove. Baby loves it, too!

    Serves: 6

    • 500g brown lentils
    • 100ml olive oil
    • 2 tablespoons tomato puree
    • 3 to 4 carrots, sliced
    • 1 large red onion, grated
    • 1 to 2 cloves garlic, peeled
    • 2 teaspoons dried Greek oregano
    • 2 bay leaves
    • salt and pepper to taste

    Prep:15min  ›  Cook:6hr  ›  Ready in:6hr15min

    1. Place lentils in a medium saucepan, cover with water and bring to the boil. Boil for 10 minutes, then drain well and add to the slow cooker.
    2. Add all remaining ingredients to slow cooker and cover with approximately 1.5 litres of water. Cover and set slow cooker to Low for 6 to 8 hours.

Do not skip the step of pre-boiling the lentils; if you don't do this, your lentil soup will turn out like sludge.

I had read the previous comment about the soup being bland so I added some extra Oregano and some Italian Seasoning (didn’t have any Greek Seasoning). I added a tin of crushed tomatoes to give it some extra veg and then used Vegetable Stock instead of water. It still turned out bland.  -  17 Feb 2019  (Review from Allrecipes US | Canada)
