Warm Broad Bean and Feta Salad

    Combine the flavours of feta cheese, broad beans, ripe plum tomatoes and olives, and enjoy this salad served warm with bread. Delicious!

    Ingredients
    Serves: 4 

    • 450g shelled fresh or frozen broad beans
    • 2 tbsp olive oil
    • 225g small plum tomatoes, cut into wedges
    • 2 garlic cloves, crushed
    • 200g feta cheese, cubed
    • 2 tbsp chopped fresh parsley
    • 12 stoned Kalamata olives, or other stoned black olives
    • 1 tbsp lemon juice

    Method

    1. Cook the broad beans in boiling water until just tender, then drain well. Meanwhile, heat the olive oil in a large nonstick frying pan, add the tomatoes and garlic, and gently cook for 2-3 minutes or until softened. Remove the pan from the heat.
    2. Add the feta cheese to the frying pan, with the beans, parsley, olives, lemon juice and a few grinds of ground black pepper. Stir together, then serve warm.
