450g shelled fresh or frozen broad beans
2 tbsp olive oil
225g small plum tomatoes, cut into wedges
2 garlic cloves, crushed
200g feta cheese, cubed
2 tbsp chopped fresh parsley
12 stoned Kalamata olives, or other stoned black olives
1 tbsp lemon juice

Cook the broad beans in boiling water until just tender, then drain well. Meanwhile, heat the olive oil in a large nonstick frying pan, add the tomatoes and garlic, and gently cook for 2-3 minutes or until softened. Remove the pan from the heat.
Add the feta cheese to the frying pan, with the beans, parsley, olives, lemon juice and a few grinds of ground black pepper. Stir together, then serve warm.
