About this recipe:These are vegan brownies but you could use any other brownie recipe you prefer. It's all about decorating them as small Christmas trees! I use pomegranate seeds as I think the flavour pairs well with chocolate but you could use coloured sweets.
Makes: 16 brownies
250g plain flour
400g caster sugar
65g cocoa powder
1 teaspoon baking powder
a pinch of salt
240ml vegetable oil
1 teaspoon vanilla extract

Preheat the oven to 180 C / Gas 4. Lightly grease a rectangular baking dish or tin.
Mix flour, sugar, cocoa powder, baking powder and salt in a bowl. Make a well and pour in water, oil and vanilla extract. Mix well and transfer into the prepared baking dish.
Bake in the preheated oven for 30 to 40 minutes, or until a skewer insertedinto the centre of the cake comes out clean. Allow to cool in the tin.
Turn the cake out onto a flat surface or onto a chopping board. Using a jagged knife to cut the brownies into sharp triangles. Decorate with pomegranate seeds or other sweets as desired and put a small star on the top.
