Peel the onion and stick several whole cloves into it. Set aside.
Arrange the leeks in the bottom of the slow cooker. Place the stewing steak and the beef bone on top. Season well with salt and pepper. Add the remaining ingredients, including the prepared onion. Cover with cold water. Set slow cooker to Low and cook for 8 to 10 hours.
Serve the beef with the vegetables, with Dijon mustard and cornichons on the side. The resulting broth can be sieved and enjoyed as a first course.
