Grilled salmon radicchio wraps

    Grilled or barbecued salmon chunks are wrapped in radicchio leaves and topped with fresh pico de gallo and creamy yogurt. This is a lovely starter if you need something for a crowd since you can cook the salmon earlier in the day.

    Ingredients
    Serves: 4 

    • Pico de Gallo
    • 1 tomato, seeded and diced
    • 1/2 red pepper, seeded and diced
    • 1/2 red onion, chopped
    • 1 lime, juiced
    • Creamy sauce
    • 135g plain Greek yogurt
    • 2 tablespoons skimmed milk
    • 1/2 teaspoon savoury seasoning or herbal salt
    • Wraps
    • 450g skinless grilled salmon, cut into chunks
    • 12 leaves whole radicchio (red chicory) leaves

    Method

    1. Combine tomato, red pepper, onion and lime juice in a small bowl to make pico de gallo.
    2. Whisk Greek yogurt, skimmed milk and seasoning together in another small bowl to make a creamy sauce.
    3. Place some cooked salmon chunks in a radicchio leaf. Top with some pico de gallo and cream sauce. Repeat with remaining salmon and radicchio leaves.

    Season your salmon in what you like prior to grilling. That is my one suggestion. I never would have thought to use taco seasoning but it was all I had and I went for it. It turned out excellent.
