Grilled salmon radicchio wraps

    Grilled or barbecued salmon chunks are wrapped in radicchio leaves and topped with fresh pico de gallo and creamy yogurt. This is a lovely starter if you need something for a crowd since you can cook the salmon earlier in the day.

    Serves: 4 

    • Pico de Gallo
    • 1 tomato, seeded and diced
    • 1/2 red pepper, seeded and diced
    • 1/2 red onion, chopped
    • 1 lime, juiced
    • Creamy sauce
    • 135g plain Greek yogurt
    • 2 tablespoons skimmed milk
    • 1/2 teaspoon savoury seasoning or herbal salt
    • Wraps
    • 450g skinless grilled salmon, cut into chunks
    • 12 leaves whole radicchio (red chicory) leaves

    1. Combine tomato, red pepper, onion and lime juice in a small bowl to make pico de gallo.
    2. Whisk Greek yogurt, skimmed milk and seasoning together in another small bowl to make a creamy sauce.
    3. Place some cooked salmon chunks in a radicchio leaf. Top with some pico de gallo and cream sauce. Repeat with remaining salmon and radicchio leaves.

    I was getting a little nervous reading the reviews about it needing more flavor. We grilled it with our usual seasonings. I was also worried about the radicchio bitterness but with all the ingredients combined, it was great. I also added a tablespoon of lite mayo to the dressing and served with feta cheese.     I think this recipe needs some adjustments for those that are trying to eat healthier, but are not hardcore about it. The whole dish needed a punch of flavor. Maybe add blackened or cajun seasoning to the fish, or some spice to the pico de gallo? If I were to make this again, I would switch out the radicchio for another type of lettuce leaf, because it left a bitter aftertaste in my mouth after every bite which was unpleasant.  -  12 Mar 2018  (Review from Allrecipes US | Canada)


    Season your salmon in what you like prior to grilling. That is my one suggestion. I never would have thought to use taco seasoning but it was all I had and I went for it. It turned out excellent.
