Preheat oven to 180 C / Gas 4. Line a muffin tin with 8 paper cases.
Using a very sharp knife or mandolin, thinly slice the potatoes.
Place a slice of potato on the bottom of each of the 8 cases and brush each slice with oil. Stack the potato slices over each other, creating several layers without forgetting to brush with oil. On the third layer, season with a little salt and pepper. Continue to fill each paper case evenly with potato slices, about 8 in total.
Bake for 35-45 minutes or until the potatoes are golden. Garnish with fresh thyme or rosemary.
