Potato stacks

    Thin slices of potato that have been brushed with oil are layered in a muffin tin and roasted to make these elegant potato stacks. A lovely way to present potatoes for a special occasion or dinner party.

    Ingredients
    Makes: 8 stacks

    • 2 or 3 medium potatoes, well washed
    • 2 to 3 tablespoons extra virgin olive oil
    • salt and pepper to taste
    • 1 tablespoon fresh thyme or rosemary

    Method
    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat oven to 180 C / Gas 4. Line a muffin tin with 8 paper cases.
    2. Using a very sharp knife or mandolin, thinly slice the potatoes.
    3. Place a slice of potato on the bottom of each of the 8 cases and brush each slice with oil. Stack the potato slices over each other, creating several layers without forgetting to brush with oil. On the third layer, season with a little salt and pepper. Continue to fill each paper case evenly with potato slices, about 8 in total.
    4. Bake for 35-45 minutes or until the potatoes are golden. Garnish with fresh thyme or rosemary.
