    One pot pasta with broccoli. This is a pasta recipe with broccoli that originated in Puglia and Calabria, it's easy, fast and cheap - as well as very tasty!

    Serves: 4 

    • 5 tablespoons extra virgin olive oil
    • 6 anchovy fillets, roughly chopped (optional)
    • 2 small dried red chillies, chopped, or 1/2 teaspoon chilli flakes
    • 2 cloves garlic, roughly chopped
    • 1 large head broccoli, cut into small florets
    • 360g penne rigate
    • grated Parmesan cheese, to serve

    1. In a large frying pan heat the olive oil and add the anchovies (if using), chillies and garlic. Cook on a low heat for about 5 minutes and remove the garlic as soon as it becomes golden.
    2. In the meantime, cook the broccoli in a large pan full of boiling salted water for approximately 6 minutes, then add the pasta to the broccoli and cook until al dente. Drain well.
    3. Add the drained pasta and broccoli to the frying pan containing the flavoured oil and anchovies and mix gently to coat well.
    4. Sprinkle with Parmesan and serve!
