Potato, leek, courgette and onion soup

    Lovely warming winter soup. More than just your average leek and potato soup, thanks to the addition of courgette.

    Serves: 4 

    • 50g butter
    • 1 small onion, chopped
    • 400g potatoes, cut into 1cm pieces
    • 250g leeks (white part only), sliced
    • 150g courgette, chopped
    • salt and pepper to taste
    • 1 1/2 pints vegetable stock
    • 5 dashes Worcestershire sauce
    • 1/2 pint milk

    1. Melt the butter slowly in a heavy saucepan, do not burn. Add the onion and stir for a couple of minutes on low heat.
    2. Add the potatoes, leeks and courgette and stir well. Season with salt and pepper. Place the lid on top of the pan of vegetables and cook over a low heat for 10 to 12 minutes.
    3. Add most of the stock, bringing quickly to the boil. Turn the heat down and simmer for 5 minutes.
    4. Purée the contents of the pan until you have a smooth consistency. Add the Worcester sauce. Taste and if necessary adjust the seasoning.
    5. Add all of the milk and turn the heat up to high. Once boiling turn down and simmer for 5 minutes before pouring into warmed bowls.

    To serve...

    Suggestion is to serve with warm toasted bread (your own preference).
