Banana porridge with turmeric

    Turmeric adds a nice yellow colour and spice to this banana porridge. Add a spoonful of peanut butter for a great breakfast to start the day.

    Ingredients
    Serves: 1 

    • 240ml water
    • 40g oats
    • 1/2 banana, sliced
    • 1/4 teaspoon ground turmeric
    • 1/2 teaspoon ground cinnamon
    • 1 tablespoon peanut butter, or to taste

    Method
    Prep:5min  ›  Cook:7min  ›  Extra time:2min resting  ›  Ready in:14min 

    1. Combine water and oats in a small saucepan; bring to the boil. Reduce heat and stir in banana slices and turmeric. Continue cooking until desired consistency is reached, 2 to 5 minutes more.
    2. Remove saucepan from heat and stir in cinnamon. Stir porridge and cover saucepan; let sit until thickened, about 2 minutes.
    3. Transfer porridge to a bowl and top with peanut butter.

    Note:

    Milk can be used in place of the water, if desired.

    I loved this twist on oatmeal. I only had fresh turmeric so I used my smallest shredder and it worked out just fine. I did add 2 packets of Truvia and a splash of milk. I did not care for the peanut butter in the oatmeal, it seemed it was competing with the turmeric. I will leave it out next time I make it.
