    12 hours 20 min

An easy to make vegan nut cheese made from raw cashew nuts. Great for those on a dairy free diet. Look for the harder to find ingredients online or in health food shops.

    1. Soak the cashews in water overnight. Drain well.
    2. Place the cashews in a food processor with 375ml fresh water. Blend till smooth, then add all remaining ingredients and process till well combined.
    3. Pour the mixture into a saucepan and place over low heat. Heat through, stirring constantly, till thickened and pulling away from the sides of the pan. Cook for a further 2 minutes, stirring constantly, then pour into a glass bowl. Level and press down the cheese with the back of a spoon.
    4. Cover and chill in the fridge for 4 hours. To serve, invert onto a serving plate and cut into slices.

Sour tapioca starch is a popular ingredient in Brazil, called polvilho azedo. It adds body and flavour to this recipe, but you can use cornflour instead if you can't find it.
