Spicy roasted sweet potatoes

    This quick and easy roasted sweet potato recipe with garlic and butter gets a spicy kick from chilli powder.

    Ingredients
    Serves: 6 

    • 6 sweet potatoes, peeled and quartered
    • 5 tablespoons butter, melted
    • 3 tablespoons brown sugar, or more to taste
    • 1 tablespoon onion granules
    • 1 tablespoon garlic granules
    • 1 tablespoon chipotle chilli powder, or more to taste
    • 1 1/2 teaspoons salt
    • 1 teaspoon ground black pepper

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with parchment.
    2. Toss sweet potatoes and butter together in a large bowl.
    3. Whisk brown sugar, onion granules, garlic granules, chilli powder, salt and black pepper together in a small bowl; sprinkle over sweet potatoes and toss to coat. Pour potatoes in a single layer onto the prepared baking tray.
    4. Roast in the preheated oven until potatoes are tender, 30 to 45 minutes.

    Suggestion:

    Use 2 tablespoons chipotle chilli powder and 4 tablespoons brown sugar for a spicier version of this dish.

    Sweet, spicy and better than I imagined it would taste. I didn't have any chipotle chili powder so I substituted cayenne pepper. Also, I used olive oil instead of butter. My husband loved it and said we should always use this recipe for roasted sweet potatoes.     Made this for recipe group and it is a keeper for sure!!! The description said it all. Sweet, salty, spicy, and a flash of heat.
