Christmas chocolate cake

    This was really easy to make and tasted out of this world, and you can make it not just for Christmas. Decorate it however you like.

    Makes: 1 cake

    • 200g (7 oz) butter
    • 200g (7 oz) caster sugar
    • 175g (6 oz) self raising flour
    • 30g (1 oz) unsweetened cocoa powder
    • 4 eggs
    • 50g (2 oz) marshmallows, melted
    • 100g (4 oz) chocolate chips

    1. Cream the butter and sugar together, then add the eggs, beating well after each addition, till light and fluffy. Mix in the flour and cocoa. Divide mixture between two greased 20cm (8 in) round cake tins.
    2. Bake on the middle shelf of a preheated 180 C / Gas 4 oven for 25 to 30 minutes, then remove from oven and cool completely.
    3. When cooled, on one half of the sponge spread your melted marshmallows. Top with the other sponge.
    4. Melt the chocolate chips in a heatproof bowl placed over a pan of barely simmering water. Stir till smooth and melted.
    5. Pour melted chocolate chips over your chocolate cake, wait for 10 minutes and then add your preferred decorations
