Spice Fruit Muffins

    An easy recipe using a classic mix of spices, fruit and treacle.

    • 250g Self-raising flour
    • 2 tsp Baking powder
    • 150g Sugar (dark brown)
    • 100g Sultanas (dried fruit)
    • 1 tsp Ground ginger
    • 1 tsp Ground cinnamon
    • 70ml Oil (olive)
    • 1 tbsp. Treacle (25g)
    • 1 Large egg (beaten)
    • 220ml Milk


    1. Preheat oven: electric 200C (180C fan).
    2. Prepare a 12-muffin tray (silicon or paper cases).
    3. Mix dry ingredients, one at a time, in a large bowl.
    4. Mix wet ingredients, one at a time, in a small bowl.
    5. Fold wet ingredients into the large bowl to form a runny and lumpy batter.
    6. Spoon (or ladle) the batter into muffin cases.
    7. Cook for 20 mins or until well risen.
    8. Dust with icing sugar (optional).
    9. Leave to cool.


    Add a little hot water to the treacle to make it easier to mix with the oil. The muffins freeze well.
