Spice Fruit Muffins
An easy recipe using a classic mix of spices, fruit and treacle.

Ingredients
- 250g Self-raising flour
- 2 tsp Baking powder
- 150g Sugar (dark brown)
- 100g Sultanas (dried fruit)
- 1 tsp Ground ginger
- 1 tsp Ground cinnamon
- 70ml Oil (olive)
- 1 tbsp. Treacle (25g)
- 1 Large egg (beaten)
- 220ml Milk
Method
- Preheat oven: electric 200C (180C fan).
- Prepare a 12-muffin tray (silicon or paper cases).
- Mix dry ingredients, one at a time, in a large bowl.
- Mix wet ingredients, one at a time, in a small bowl.
- Fold wet ingredients into the large bowl to form a runny and lumpy batter.
- Spoon (or ladle) the batter into muffin cases.
- Cook for 20 mins or until well risen.
- Dust with icing sugar (optional).
- Leave to cool.
Tip
Add a little hot water to the treacle to make it easier to mix with the oil. The muffins freeze well.
