    This is a very quick and easy recipe - perfect for busy moms that need a warming up soup on a cold afternoon.

    Serves: 4 

    • 2 tablespoons butter
    • 2 onions, chopped
    • 4 garlic cloves, chopped
    • 2 carrots, chopped
    • 2 large parsnips, chopped
    • 2 medium potatoes, peeled and chopped
    • 2 heaped teaspoons korma curry spice
    • 2 stock cubes
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon dried coriander
    • double cream and paprika to serve
    • salt and pepper to taste

    1. In a large saucepan, fry onions and garlic in butter until golden brown. Add carrots, parsnips, potatoes and korma curry powder and cook for 10 minutes.
    2. Make up 2 stock cubes with 850ml of hot water and add to the pan along with the parsley and coriander. Simmer for 20 minutes.
    3. Serve with a spalsh of double cream and sprinkle of paprika. If needed season with salt and freshly ground pepper.

    You can also blend it at the end if you dont like it chunky. I also added some roasted gammon i had leftover from dinner. Tasted amazing in this soup!!  -  15 Dec 2016
