    1. Preheat oven to 180 C / Gas 4. Grease a 23cmx13cm loaf tin.
    2. Place sweet potato on a microwave-safe plate and pierce skin 5 or 6 times. Cook in the microwave, rotating halfway through, until tender, 5 to 8 minutes. Cool until easily handled, about 5 minutes. Peel and mash in a small bowl.
    3. Mix wholemeal flour, bicarbonate of soda, cinnamon, nutmeg and salt together in a large bowl.
    4. Whisk apple sauce, eggs and maple syrup together in a separate bowl. Mix in mashed sweet potato.
    5. Pour apple sauce mixture over flour mixture; stir to combine. Fold in walnuts. Pour into the prepared loaf tin.
    6. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 45 to 55 minutes. Cool in the tin for 15 minutes; turn loaf out onto a wire cooling rack and let cool completely, about 20 minutes.

I will absolutely make this again! I added 1/4 tsp ground allspice, a full tsp of cinnamon (instead of 3/4) and used 1 tbsp fresh ginger instead of powdered. I also cut the maple syrup in half. I baked it for 50 minutes, but I might bake it for a little bit less next time. I added 1/2 tsp extra virgin olive oil to my slice after it was finished cooling. I loved how big the slices were when I cut the bread into eighths! I typically cut my bread into 12 or even 16 slices, but this was still a relatively low-calorie slice even though it was so thick!  -  09 Feb 2018  (Review from Allrecipes US | Canada)
